Mangos have a sweet and succulent flesh, and once you have tasted of their perfection, it’s hard to find another fruit that equals. For me, eating a mango is just as sinful as eating a delicious dessert, only without the caloric regrets! As a kid, I was often asked the playful question: If you could only eat one thing for the rest of your life, what would it be?” Today, my answer would come immediately and without regret. Mangos! Sometimes, getting to the fleshy interior of the fruit is a tricky thing. There are a few ways to cut a mango, but my favorite way is similar to how a pineapple is cut. First, I cut off a bit on the two ends, so it can stand on the cutting board securely while cutting the skin away. Then, I gently follow the curve of the fruit with my knife, cutting just interior to the skin, all the way down the fruit, repeated until all the skin has been sliced away. Now you are left with a skinless mango!
The next step is getting the fleshy fruit cut away from the seed in the middle. Since you can’t slice through the seed, you will feel with your knife where the seed is. Simply place your knife slightly off center, and cut down through the mango. If you find resistance in cutting all the way through, it is because the seed is at that location. Simply adjust your knife just to the side and slice again. Soon, you will be left with a nice pile of strips, which you can leave whole, or chop again into bite-size pieces.
